The rides in kidzopolis and camp cartoon are not very plus size friendly. Everything else should be ok though

In addition to the suggestions earlier, I'm about 6'0 and 310.
I can easily Ride Demon, Dark Knight, and Whizzer. Family rides: Sky Trek Tower, East River Crawler, Loggers run, Yankee Clipper, Roaring Rapids, Big Easy Balloons, Buccaneer Battle, Chubasco, Condor, Fiddlers Fling, HOmetown Fun Machine, Jesters Wild Ride, Rue Le Dodge, Orbit, Triple Play, Scenic Railway are the ones I usually ride.
Rides I'd put as a definite no for me: Batman, Superman, Eagle, Viper, X Flight, Revolution, Raging Bull, Whirligig, King Chaos, Vertical Velocity,
I do not fit in the test seat in front or in any other row. It was an operator that had me try the row when I failed to fit in row 1. It's worth a test if you are up for it.
As far as plus sized riders, I can give some insight on what you may expect on Goliath. I rode Outlaw Run with seat belts about a month ago and I'm roughly 280 lbs at 5'8''. The seat belts they used on that are a lot like the ones that are on Millennium Force and Top Thrill Dragster, but have a much longer belt. I was able to easily fasten this on my own. On TTD and MF, it's a takes a bit of effort. I didn't trip any faults with the lap bar either and it locked properly for me the first time. If Goliath uses similar restraints, I think most everyone will be fine.
Just to clear your situation up for not fitting the normal seatbelt the "big boy seat" I believe has an extra 2 to 4 inches(maybe more) of extra belt to it and it's row 4 not row 5!

The big boy seats also usually have 2 belts on them instead of one. I didn't think any rides at SFGAm have them though. I found this to be a novel concept the first time I went to Orlando.
I'd think the risk of diabetes, stroke, heart attack and taking more room than you deserve on airplanes would be more motivation to drop some of that weight then getting on a roller coaster.
"Deep Fried" is not one of the four food groups. Eat a salad once in a while.
