I think over the years I've been able to find some exact matches to the songs that they played around the park. Many of the songs in Carousel Plaza could be found on the album "Historic Wurlitzer Carousel Organ Music, Vol. 1", such as:

I think Yankee Harbor played various sea shanties, but they were weird in that they sounded almost like disco versions of them (it was the 70s, after all). I've linked to Screams and Dreams Vol. 1 when they're talking about the Tidal Wave here and you can hear kind of a funky version of "Drunken Sailor":
I think all the stuff played in the Marriott sections with the exception of Carousel Plaza was actually originally recorded for the parks, so I don't think you can find the exact versions anywhere unless you somehow had access to the park's music. I was able to identify a lot of the songs though just walking around. Here are some of the song titles I was able to identify in the park soundtrack (but I don't have the exact versions):
Hometown Square: "Maple Leaf Rag", "The Entertainer", "The Easy Winners", "Pineapple Rag", "Bethena", "Magnetic Rag", "The Ragtime Dance", and "Palm Leaf Rag", all by Scott Joplin. Many of these were on the violin similar to many of the versions released on an album by Itzhak Perlman. Here's "The Easy Winners" for example:
I would also hear the song "Let Me Call You Sweetheart".
From about 2011-2015, in addition to the ragtime stuff they would also play a lot of big band and swing from the 30s and 40s like "Take the A Train", "Sing Sing Sing", and "Jump Jive an' Wail".
County Fair: I would often hear popular songs from the early 20th century in this area like the aforementioned "Toot Toot Tootsie Goodbye", "Five Foot Two Eyes of Blue", "My Blue Heaven", and "When You're Smiling." Orleans Place: Here they would play dixieland versions of many New Orleans favorites like "Georgia Camp Meeting", "Camptown Races", "Bill Bailey", and "Sweet Georgia Brown."
Southwest Territory: I would often hear themes from old Western movies like "The Magnificent Seven" and tv shows like "Maverick" in this area, as well as guitar versions of cowboy songs like "El Paso" by Marty Robbins and "Red River Valley." Here is a guitar version of "El Paso" by Grady Martin very similar to what they'd play in Southwest:

It really is awesome. I heard it last year for the first time, really adds to the suspense! Seems like they were messing with the sound system at the end of the season. There was some original Marriotts music playing in county fair games. I really hate the pop music they used last year. The loop was only like an hour long and it was really noticeable when its playing through the entire park. Im fine with modern music, but please bring back separate area loops!
Pop party music in Carousel plaza, Electro swing in HTS, Big band/Postmodern Jukebox in CF, Country in SWT, Indie acoustic songs in YT, and Modern Dixieland Jazz in OP. (Honestly, i dont know what they could do in YH)
