"The Incredible Scream Machine: History of the Roller Coaster" by Robert Cartmell is one of the definitive history of roller coasters before the 1980's. One of the very few, if only, that used academic research as sources.
"Roller Coasters, Flumes and Flying Saucers" by Robert Reynolds is a wonderful history of Arrow. Used to have an insane price tag due to limited print run, but it is on Amazon Kindle for $3.99.
There are a boatload of Disney books if you want to know about any of them.

A far as Disney goes, Modern Marvels is a classic and they seem to keep updating it. Bummer I have it from 2007. Their planning Dvds are amazing. But my favorite comes from QueStar. It's titled Dinsey Parks: The Secrets, Stories and Magic Behind the Scenes. They were played on Travel Channel and I have grown quite fond of them.
